Fermented by a natural and traditional Japanese method that allows the fermentation process to occur slowly. It has a pleasant fruity scent, instead of a heavy stuffy smell that is common for rice vinegar. Made from 100% organic rice & has a mild acidity and rich flavour. Recommended for use to flavour Sushi rice and for use in traditional & modern Asian cuisine.
